It’s always a treat to have an abundance of fresh fruits on hand. I have a tip on how to make frozen fruit sorbet. Select your favorite fruit, cut it in half and remove any seeds. For fruits such as mango or pineapple, scoop out a circular “crater” in the middle of the flesh while keeping the fruit attached to the skin. Next, securely wrap the prepared fruit in parchment paper and place it in the freezer for at least 24 hours, or until it is completely frozen and firm. After this, let the frozen fruit sit at room temperature for about 5–10 minutes to soften slightly and then add a small splash of coconut milk or coconut water into the well in the center. Utilizing a sturdy metal spoon or ice cream scoop, scrape the softened frozen fruit into the liquid. Continue scraping, stirring, and mashing the fruit together until it turns into a smooth, creamy, and fluffy sorbet-like texture. For extra sweetness, add a little bit of maple syrup or a squeeze of fresh lime juice. Enjoy a simple, naturally sweet frozen treat made with whole fruit and a few wholesome ingredients.
