The Ulsan City Office of Education is promoting vegetarianism in response to climate change and to improve student health. Currently, 92% of its 248 schools offer daily vegetarian meals to students who request it, and 94% have “Meat-free Monday” lunches every two weeks. The meals use protein-rich legumes instead of meat. School cooks, nutrition teachers, and dieticians have received specialized training on vegetarianism and climate change.
The schools have also carried out a wide range of initiatives to promote veg education and connect students with the environment, including setting up veg cooking festivals and school gardens.
