This hearty vegan dish can be easily made with ingredients you have on hand, or you may create your own style by adding your favorite ingredients.

INGREDIENTS (For all ingredients, please use organic versions if available)

For Ching Hai’s Vegan Goulash, the ingredients are: ½ vegan ham, 1 cup of textured soy protein, 2 zucchinis, 2 cups of diced pumpkin, ½ red bell pepper, ½ green bell pepper Maggi sauce (optional), 2-3 tablespoons of paprika, Filtered water, ½ tablespoon of salt, 2-3 tablespoons of ground black pepper, 1-2 tablespoons of coriander seed powder, Mushroom seasoning (optional), 2-3 tablespoons of sticky rice flour (optional: cornstarch or wheat flour)

For the dough: 6 cooking spoons of flour

If you don’t have red pepper, green pepper is OK, and yellow pepper is OK. Anything “à la Ching Hai,” you can cook with anything, that’s the rule, because She cooks with anything She has in the fridge. But the basics you must know.

And half of the green bell pepper; this will deepen [the flavor of] your soup. And if you don’t feel it’s deepened enough, you can add a little bit of apple juice or apple itself, you know already, and pear. I told you the trick to making a nice bouillon; you don’t even need vegetable bouillon if you have enough vegetables.
